Sun Dried Natural

Sun Dried Natural, also referred to as dry process or traditional natural, is a method where whole coffee cherries are dried in the sun, typically on raised beds or patios. This age-old technique allows the coffee bean to absorb flavors from the fruit as it dries, which can take 3-4 weeks depending on weather conditions. The dried cherries are then hulled to remove the dried fruit and parchment layers. Sun dried naturals often have a more complex, fruity flavor profile with prominent sweetness and full body. They can exhibit notes of berries, tropical fruits, and sometimes wine-like or fermented characteristics. This method is water-efficient but labor-intensive, requiring frequent turning of the cherries to ensure even drying and prevent mold growth. It's particularly common in Ethiopia, where it contributes to the distinct, berry-forward profiles of many Ethiopian coffees.
